It was a long winter. In the past month, Pittsburgh has had some sunny days, but the cold weather always seemed to find its way back. This past weekend, however, was beautiful! I spend the entire weekend outside. We opened our pool, did yardwork and went for a long trail run without having to wear layers of clothes. I was reminded how much I love hot weather. Sun beating down on my body makes me so happy!
Hot weather also impacts my eating. I don’t want to be indoors cooking – I want to be outside sipping a smoothie in the sun. And, that’s exactly what I did.
I’ve made a lot of smoothie’s in my time, but this pineapple banana smoothie screams summer. It’s made with only 4 ingredients – Greek yogurt, milk, banana and frozen pineapple. And, the only equipment that you need is a blender. Because this smoothie doesn’t have any greens, it doesn’t require a high-powered food processor. I used my nutri-bullet pro and it blended to a smooth consistency within 1 minute.
The next time you crave a taste of the tropics, whip up this protein-packed pineapple-banana smoothie. Cheers to a hot weekend – may the sunshine be here to stay!
